- Flip ribs over and apply mustard to meat side. Season with medium layer of Mississippi Grind, sweat for 20 minutes then apply medium layer of KH BBQ rub.
- Place in smoker for 3 hrs; spritzing every 30-45 minutes with water/apple cidar vinegar mix.
- Create foil boat for each rib slab. In each, apply 1/4 c brown sugar, dots of butter, Kosmo's Apple Cherry Habanero Glaze and KH Vinegar Sauce. Place ribs meat side down in mixture, then add vinegar sauce to the back side. Close the foil up and around the ribs folding the ends up for easy access to check tenderness.
- Return the ribs to the smoker for 2 hrs. Prepare the sauce (1 bottle KH BBQ sauce, 1/2 bottle KH Vinegar Sauce, 1/4 c TX Pepper Jelly Apple Cherry Habanero Rib Candy). Combine all and heat over medium heat.
- Take ribs out and let rest for 1 hr.
- Carefully transfer ribs to new foil boats. Brush with warmed glaze and return to smoker for another hour. Apply glaze periodically. Should be ~204° when done.
